  • 1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium red onion, sliced into wedges
  • 3 tbsp olive oil
  • Juice of 1 lime
  • 2 tbsp fajita seasoning
  • ½ cup Greek yogurt
  • ½ tsp chili powder

Instructions

  1. Wash and chop the bell peppers and red onion. Cut the chicken into bite-sized pieces.
  2. In a large bowl, mix olive oil, lime juice, and fajita seasoning. Add the chicken pieces and coat well. Marinate for at least 20 minutes.
  3. Thread the marinated chicken and vegetables onto skewers, leaving space between each piece.
  4. Preheat your grill to medium-high heat (about 400°F). Grill kabobs for 10-12 minutes, turning occasionally until the chicken is cooked through (165°F internal temperature).
  5. Remove from heat and let rest for a few minutes before serving. Pair with Greek yogurt sauce drizzled on top or as a dip.
