Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 large sweet onion, chopped
  • 1 cup low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup long-grain white rice
  • 2 tbsp low-sodium soy sauce
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Season chicken breasts with salt and pepper.
  3. In a skillet, sauté onions and garlic until translucent.
  4. Stir in cream of mushroom soup, chicken broth, soy sauce, paprika, salt, and pepper; simmer for 5 minutes.
  5. Place seasoned chicken in the baking dish and pour the sauce over it. Cover with foil.
  6. Bake for 30-35 minutes or until the internal temperature reaches 165°F (75°C).
  7. Cook rice according to package instructions while chicken bakes.
  8. Serve chicken over rice with sauce poured on top.
