Description

Ingredients

  • 1 lb (450g) fresh skinless salmon fillets
  • 2 cups (400g) short-grain sushi rice
  • 1/2 cup (120ml) Kewpie mayonnaise
  • 3 tbsp Sriracha sauce (adjust to taste)
  • 1/4 cup (25g) chopped green onions
  • 4 sheets nori, crumbled or whole
  • 1/4 cup (60ml) low-sodium soy sauce

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions until fluffy and slightly sticky.
  2. In a bowl, mix Kewpie mayonnaise with Sriracha sauce until well combined.
  3. Spread half of the cooked rice in a greased baking dish, pressing it down gently.
  4. Flake cooked salmon over the rice and drizzle some spicy mayo mixture on top.
  5. Layer remaining rice over the salmon and pour any leftover spicy mayo mixture on top.
  6. Preheat oven to 350°F (175°C) and bake for about 20 minutes until bubbly and golden.
  7. Garnish with green onions and crumbled nori before serving.
