Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup plain breadcrumbs
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup balsamic vinegar
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian herbs
  • 1/4 cup ketchup
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent.
  3. In a large bowl, mix ground beef, breadcrumbs, sautéed onions and garlic, eggs, Parmesan cheese, salt, pepper, Italian herbs, and ketchup until well combined.
  4. Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
  5. In a small bowl, whisk together balsamic vinegar with additional ketchup; brush half of the glaze over the meatloaf.
  6. Bake for 60-70 minutes or until the internal temperature reaches 160°F (70°C), brushing with remaining glaze during the last 10 minutes.
  7. Let rest for 10 minutes before slicing.
