- 1 lb ground beef (80/20)
- 1 cup plain breadcrumbs
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1/2 cup balsamic vinegar
- 2 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian herbs
- 1/4 cup ketchup
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, sauté the chopped onion and minced garlic until translucent.
- In a large bowl, mix ground beef, breadcrumbs, sautéed onions and garlic, eggs, Parmesan cheese, salt, pepper, Italian herbs, and ketchup until well combined.
- Shape the mixture into a loaf on a lined baking sheet or in a loaf pan.
- In a small bowl, whisk together balsamic vinegar with additional ketchup; brush half of the glaze over the meatloaf.
- Bake for 60-70 minutes or until the internal temperature reaches 160°F (70°C), brushing with remaining glaze during the last 10 minutes.
- Let rest for 10 minutes before slicing.
