Ingredients

  • 1 cup full-fat coconut milk
  • 1 cup 100% pure pineapple juice
  • 2 tablespoons honey or agave syrup
  • 1 cup fresh pineapple chunks

Instructions

  1. In a blender, combine the coconut milk, pineapple juice, and honey until smooth.
  2. Add the fresh pineapple chunks and pulse a few times to keep some chunkiness.
  3. Carefully pour the mixture into popsicle molds, leaving space at the top for expansion.
  4. Insert popsicle sticks and freeze for at least 4 hours or until solid.
  5. To serve, run warm water over the outside of the molds for easy removal.
