- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated and excess water squeezed out
- 2 tbsp fresh dill, chopped
- 3 garlic cloves, minced
- 2 tbsp lemon juice (freshly squeezed)
- Salt & pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
- Grill or sauté chicken for about 6-7 minutes per side until cooked through. Let cool slightly, then chop into bite-sized pieces.
- In a bowl, combine Greek yogurt, garlic, grated cucumber, lemon juice, dill, salt, and pepper to create the tzatziki sauce.
- Mix chopped chicken with the tzatziki sauce until well-coated.
- Serve chilled on leafy greens or in pita pockets.
