Description

Tzatziki Chicken Salad is a refreshing dish that combines tender chicken, creamy tzatziki, fresh herbs, and crunchy cucumbers, making it perfect for a light lunch or summer gathering.


Ingredients

  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated and excess water squeezed out
  • 2 tbsp fresh dill, chopped
  • 3 garlic cloves, minced
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper.
  2. Grill or sauté chicken for about 6-7 minutes per side until cooked through. Let cool slightly, then chop into bite-sized pieces.
  3. In a bowl, combine Greek yogurt, garlic, grated cucumber, lemon juice, dill, salt, and pepper to create the tzatziki sauce.
  4. Mix chopped chicken with the tzatziki sauce until well-coated.
  5. Serve chilled on leafy greens or in pita pockets.
