  • 8 oz egg noodles

  • 8 oz fresh cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup sour cream (full-fat)
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat. Sauté onions and garlic until fragrant.
  2. Add sliced mushrooms and cook until golden brown, about 5-7 minutes.
  3. Increase heat and add sliced beef sirloin. Sear until browned but still pink inside.
  4. Stir in beef broth and Dijon mustard, seasoning with salt and pepper. Simmer gently.
  5. Lower heat and mix in sour cream until well combined. Heat through without boiling.
  6. Serve over cooked egg noodles, garnished with fresh parsley if desired.
