  • 2 cups crispy rice (puffed or fried)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 1/2 red onion, thinly sliced
  • 4 cups lettuce (romaine or iceberg), chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp taco seasoning
  • Juice of 1 lime

Instructions

  1. If using uncooked rice, toast it in a non-stick skillet over medium heat until golden brown and crispy. Set aside to cool.
  2. In a large mixing bowl, combine black beans, cherry tomatoes, avocado, red onion, and lettuce. Toss gently.
  3. Sprinkle taco seasoning over the mixture and squeeze lime juice on top. Toss again until well combined.
