Ingredients

  • 2 large Russet potatoes
  • 8 oz sirloin steak (or ribeye)
  • 1 cup sharp cheddar cheese, shredded
  • 2 green onions, chopped
  • ½ cup sour cream
  • Olive oil
  • Salt and pepper to taste
  • 1 tbsp butter

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub and dry the Russet potatoes.
  2. Poke several holes in each potato using a fork to prevent steam buildup.
  3. Rub olive oil over the potatoes and season generously with salt. Bake directly on the oven rack for 45-60 minutes until tender.
  4. Meanwhile, cut steak into bite-sized pieces and sear in a hot skillet until browned and cooked to your liking. Season with salt and pepper.
  5. Once the potatoes are baked, slice them open lengthwise, fluffing the insides with a fork.
  6. Add a pat of butter to each potato, then layer with steak bites, shredded cheddar, sour cream, and green onions.
