Ingredients

  • 2 large sweet potatoes (about 600g)
  • 3 tbsp harissa paste
  • 2 tbsp extra virgin olive oil
  • 4 cups mixed greens
  • ½ cup crumbled feta cheese (about 75g)
  • ½ cup pomegranate seeds
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into uniform bite-sized pieces.
  3. In a mixing bowl, toss sweet potatoes with harissa paste and olive oil until well coated.
  4. Spread the mixture on a lined baking sheet and roast for 25-30 minutes until fork-tender and caramelized.
  5. While potatoes roast, wash and dry mixed greens.
  6. Allow sweet potatoes to cool slightly before combining them with greens in a large bowl.
  7. Top with feta cheese and pomegranate seeds.
  8. Drizzle with lemon juice, toss gently, and serve immediately.
