  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 cups vegetable broth
  • 1/2 teaspoon salt
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
  3. Stir in rinsed rice and toast for about 2 minutes.
  4. Add vegetable broth and salt; bring to a boil.
  5. Cover and reduce heat to low; simmer for 18-20 minutes until liquid is absorbed.
  6. Fluff rice with a fork, add lime juice and cilantro, and mix well before serving.
