  • 1 cup quinoa
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil

  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa with water (2 cups) and a pinch of salt. Bring to a boil, cover, and simmer on low for 15 minutes.
  2. While quinoa cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add shrimp to the skillet; cook approximately 3 minutes per side until pink and opaque. Season with salt and pepper.
  4. Squeeze lemon juice over the shrimp; stir gently to combine.
  5. Fluff cooked quinoa with a fork and mix into the skillet with the shrimp. Garnish with chopped parsley and serve hot.
