Instructions

  1. Bring a large pot of salted water to boil. Cook spaghetti according to package instructions until al dente.
  2. In a skillet over medium heat, sauté pancetta for 5-7 minutes until crispy.
  3. Whisk eggs and Parmesan together in a bowl until smooth.
  4. Drain spaghetti, reserving some pasta water, and add to the skillet with pancetta over low heat.
  5. Remove from heat, quickly stir in egg mixture until creamy; adjust consistency with reserved pasta water if necessary.
