Ingredients

  • 2 ripe avocados
  • 8 oz smoked salmon
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes
  • 1 English cucumber
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 4 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Wash the mixed greens thoroughly and pat dry.
  2. Slice cucumbers into thin rounds and halve the cherry tomatoes.
  3. In a small bowl, whisk together Dijon mustard, honey, olive oil, lemon juice, salt, and pepper until emulsified.
  4. In a large bowl, layer mixed greens as the base. Top with sliced cucumbers and cherry tomatoes.
  5. Add slices of avocado and pieces of smoked salmon on top.
  6. Drizzle with dressing and toss gently to combine without mashing the avocados. Serve immediately for freshness.
