  • 34 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 3 cloves fresh garlic, minced
  • 2 cups marinara sauce
  • 2 cups shredded whole milk mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and lightly grease a baking dish.
  2. Pat dry the chicken breasts and season both sides with salt and pepper.
  3. Set up a breading station: one plate with flour, one with beaten eggs, and one with panko breadcrumbs mixed with minced garlic. Dredge each chicken breast in flour, dip into egg wash, then coat in panko.
  4. In a skillet over medium-high heat, add olive oil until shimmering. Sear each breaded chicken breast for 3-4 minutes per side until golden brown.
  5. Place seared chicken breasts in the prepared baking dish. Spoon marinara sauce over each piece and sprinkle mozzarella and Parmesan cheese on top.
