  • 4 salmon fillets (about 6 oz each)
  • 2 tbsp chipotle peppers in adobo sauce, chopped
  • 1/3 cup fresh orange juice
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. In a bowl, mix together the chipotle peppers, orange juice, honey, minced garlic, olive oil, salt, and pepper to create the marinade.
  2. Place the salmon fillets in a shallow dish and pour the marinade over them. Let marinate for 30 minutes.
  3. Preheat your grill to medium-high heat (about 375°F).
  4. Grill the marinated salmon skin-side down for 6-8 minutes on each side until it flakes easily with a fork.
  5. For enhanced flavor, brush additional marinade on during the last minute of grilling.
