  • 1 lb chicken thighs, boneless and skinless
  • 1 medium yellow onion, chopped
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup celery, finely chopped
  • 4 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. Prep your ingredients by chopping onions, bell peppers, celery, and mincing garlic.
  2. Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, and celery until softened (about 5 minutes).
  3. Add sliced Andouille sausage and seasoned chicken thighs; cook until browned on all sides (approximately 6 minutes).
  4. Stir in minced garlic and Cajun seasoning until fragrant (about 1 minute).
  5. Pour in crushed tomatoes with a splash of water; bring to a boil then reduce heat to low. Simmer for 30 minutes.
