  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orzo: Bring a large pot of salted water to boil. Add orzo and cook until al dente (about 8-10 minutes). Drain and rinse under cold water.
  2. Prepare the veggies: While the orzo cooks, chop cherry tomatoes, dice cucumber, and finely chop red onion.
  3. Create the dressing: In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Toss everything: In a large bowl, combine cooked orzo with prepared vegetables. Drizzle dressing over the top and toss gently.
  5. Add feta & parsley: Crumble feta cheese over the salad along with chopped parsley. Lightly toss again.
  6. Chill & serve: Refrigerate for at least 30 minutes before serving to allow flavors to meld.
