  • 1 lb beef chuck roast, cut into bite-sized pieces
  • 3/4 cup pearl barley
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 8 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium-high heat, brown the beef chuck roast until a crust forms. Remove and set aside.
  2. In the same pot, sauté onions until translucent (about 5 minutes). Add garlic, carrots, and celery; cook for another 3 minutes.
  3. Return the beef to the pot and mix in pearl barley, thyme, bay leaves, salt, pepper, and beef broth.
  4. Bring to a gentle boil; then reduce heat to low and simmer uncovered for about 1 hour until the meat is tender and barley is cooked.
  5. Adjust seasoning if needed before serving hot.
