  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 4 cups low-sodium vegetable broth
  • 4 slices bacon or 1 cup Andouille sausage (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large pot, heat 1 tablespoon of oil over medium heat. Sauté the onion and garlic until fragrant, about 5 minutes.
  2. Add the diced potatoes and vegetable broth; bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
  3. Stir in Cajun seasoning and optional bacon or sausage; simmer for an additional 5 minutes.
  4. Blend the soup until smooth with an immersion blender or in batches using a regular blender.
  5. Stir in heavy cream and heat through without boiling.
