Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain rice
- 2 cups low-sodium chicken broth
- 1 cup heavy cream

- 2 tablespoons butter

Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper and cook until golden brown (5-7 minutes per side). Remove from skillet.
- In the same skillet, melt butter and sauté onions and garlic until translucent (3-4 minutes).
- Add rice to the skillet, stirring for a few minutes to toast it.
- Pour in chicken broth, bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until rice absorbs liquid.
- Stir in heavy cream and return chicken to the skillet along with peas or mixed veggies. Cook on low for another 5 minutes.
