Description

Creamy celeriac soup is a warm and comforting dish that envelops you in rich, earthy flavors. This velvety soup is not only easy to prepare but also perfect for chilly evenings or as a delightful starter for gatherings. With its smooth texture and balanced sweetness, it pairs beautifully with crusty bread or a fresh salad, making it a versatile choice for lunch or dinner.

Ingredients

Scale
  • 1 medium celeriac (about 500g), peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until softened (about 5 minutes).
  2. Add diced celeriac and vegetable broth. Bring to a gentle boil, then reduce heat and simmer until tender (about 20 minutes).
  3. Use an immersion blender to puree the soup until silky smooth. Stir in heavy cream and season with salt and pepper.
  4. Heat through without boiling, then serve hot with an extra drizzle of olive oil or fresh herbs.
