- 28 oz can crushed tomatoes
- 3 cups low-sodium vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/4 tsp red pepper flakes
- 3 tbsp extra virgin olive oil
- Fresh basil or parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Sauté onions and carrots until onions are translucent.
- Add minced garlic, oregano, thyme, and red pepper flakes; cook for 1 minute until fragrant.
- Stir in lentils, crushed tomatoes, and tomato paste until combined.
- Pour in vegetable broth to cover the mixture. Bring to a boil then reduce heat to low; let simmer uncovered for 30 minutes until lentils are tender.
