  • 1 (15 oz) can cannellini or kidney beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup small pasta (e.g., ditalini or elbow macaroni)
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  2. Stir in diced tomatoes with their juices and the drained beans.
  3. Pour in vegetable broth and add thyme sprigs and bay leaf. Bring to a gentle boil.
  4. Add pasta; cook according to package instructions until al dente.
  5. Taste and adjust salt and pepper before serving. Remove bay leaf.
