Ingredients

  • 1 cup pasta (shells or elbows)
  • 4 cups vegetable broth
  • 1 medium carrot (diced)
  • 1 stalk celery (diced)
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach or kale
  • ½ cup grated Parmesan cheese
  • 1 tablespoon extra virgin olive oil
  • Salt & pepper to taste

Instructions

  2. Pour in vegetable broth, season with salt and pepper, and bring to a gentle boil.
  3. Add pasta and cook according to package instructions until al dente (about 8–10 minutes).
  4. Stir in spinach or kale just before serving until wilted.
  5. Serve hot, topped with grated Parmesan cheese.
