  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Instructions

  1. Sauté the onion, carrot, and celery in olive oil over medium heat until softened (about 5 minutes).
  2. Add minced garlic and ground cumin; cook for an additional minute until fragrant.
  3. Stir in rinsed red lentils and pour in vegetable broth. Bring to a boil then reduce to simmer for about 20 minutes until lentils are tender.
