  • 1 can full-fat coconut milk (13.5 oz)
  • 2 cups mixed vegetables (bell peppers, carrots, zucchini)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups low-sodium vegetable broth
  • 2 tsp curry powder
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. Wash and chop mixed vegetables into bite-sized pieces.
  2. In a large pot over medium heat, add olive oil and sauté diced onions until soft and translucent (about 5 minutes).
  3. Add minced garlic and grated ginger; sauté for another minute until fragrant.
  4. Stir in mixed vegetables and curry powder; cook for 7-10 minutes until slightly softened.
  5. Pour in coconut milk and vegetable broth; bring to a simmer for about 5 minutes while stirring occasionally.
  6. Just before serving, squeeze fresh lime juice over the stew. Serve hot with rice or crusty bread.
