  • Salt and pepper to taste
  • 2 tbsp fresh herbs (thyme or parsley), chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook the penne until al dente (about 8-10 minutes), then drain, reserving some pasta water.
  2. In a skillet over medium heat, add olive oil. Sauté minced garlic and mixed winter vegetables for 5-7 minutes until tender.
