  • 1 medium cauliflower head (about 4 cups, chopped)
  • 1 medium onion (chopped)
  • 2 medium carrots (sliced)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (crushed)
  • 4 cups low-sodium vegetable broth
  • 1 cup shredded sharp cheddar cheese
  • ½ cup heavy cream
  • 2 tbsp extra virgin olive oil
  • Salt and black pepper to taste

Instructions

  1. Chop the cauliflower into bite-sized florets, dice the onion, slice the carrots and celery, and crush the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent, then add garlic, carrots, and celery; cook until tender.
  3. Add cauliflower florets and vegetable broth. Bring to a gentle boil, then reduce heat and simmer for about 20 minutes until cauliflower is tender.
  4. Blend the soup until smooth using an immersion blender or stand blender. Return to pot over low heat.
  5. Gradually stir in shredded cheddar cheese until melted. For extra creaminess, add heavy cream and season with salt and pepper to taste.
