- 4 cups low-sodium vegetable broth
- 1 cup shredded sharp cheddar cheese
- ½ cup heavy cream
- 2 tbsp extra virgin olive oil
- Salt and black pepper to taste
Instructions
- Chop the cauliflower into bite-sized florets, dice the onion, slice the carrots and celery, and crush the garlic.
- In a large pot over medium heat, add olive oil. Sauté onions until translucent, then add garlic, carrots, and celery; cook until tender.
- Add cauliflower florets and vegetable broth. Bring to a gentle boil, then reduce heat and simmer for about 20 minutes until cauliflower is tender.
- Blend the soup until smooth using an immersion blender or stand blender. Return to pot over low heat.
- Gradually stir in shredded cheddar cheese until melted. For extra creaminess, add heavy cream and season with salt and pepper to taste.
