  • 4 oz pancetta or bacon
  • 12 oz spaghetti or fettuccine
  • 4 cloves fresh garlic, minced
  • 4 large eggs
  • 1 cup freshly grated Parmesan cheese
  • Freshly cracked black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil a large pot of salted water. Add pasta and cook according to package instructions until al dente. Reserve some pasta water and drain.
  2. In a skillet over medium heat, cook chopped pancetta until crispy.

  4. Whisk together eggs and Parmesan cheese in a bowl; season with salt and pepper.
  5. Add hot pasta to the skillet with chicken and pancetta. Remove from heat, pour in egg mixture while tossing continuously to create a creamy sauce.
  6. If needed, add reserved pasta water gradually for desired creaminess. Garnish with parsley before serving.
