  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 8 oz spaghetti (regular or whole wheat)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 cup low-sodium chicken broth
  • 1 tsp Italian seasoning
  • 1 medium onion, chopped
  • 1 cup pimientos or bell peppers, diced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Season chicken breasts with salt and pepper and place in a baking dish.
  3. In a skillet over medium heat, sauté onions in olive oil until translucent; add garlic and cook until fragrant.
  4. Boil salted water in a large pot, cook spaghetti according to package instructions until al dente, then drain.
  5. In a bowl, mix cream of mushroom soup, chicken broth, Italian seasoning, sautéed onions and garlic, pimientos or bell peppers, and shredded cheese until smooth.
  6. Combine cooked spaghetti with the sauce mixture and add cooked chicken pieces; toss gently.
  7. Transfer to a greased baking dish, top with additional cheese if desired, and bake for 25-30 minutes until bubbling.
