  • 3 cloves fresh garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 medium Yukon Gold potatoes, diced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Dice the chicken breasts into bite-sized pieces. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add minced garlic; sauté for about 1 minute. Then add diced onions and cook until translucent.
  3. Stir in chopped carrots and celery; cook for about 5 minutes until they soften.
  4. Add diced Yukon Gold potatoes along with thyme and bay leaves; mix well.
  5. Pour in the chicken broth; bring to a boil then reduce heat to simmer for about 20 minutes.
  6. Stir in heavy cream and let simmer until everything is tender. Season with salt and pepper to taste.
