  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 8 oz sliced cremini or button mushrooms
  • 3 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup full-fat sour cream
  • Salt and pepper to taste
  • 1 tsp paprika
  • Cooked pasta or rice for serving

Instructions

  1. Prepare your ingredients by chopping vegetables and measuring out spices.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until golden brown (7-10 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté onions and mushrooms until softened (about 5 minutes).
  4. Stir in minced garlic, salt, pepper, and paprika; cook for another minute.
  5. Pour in chicken broth and scrape the bottom of the pan to mix in any flavorful bits. Simmer for about 3 minutes.
