  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup fresh bell peppers, diced
  • 1 cup fresh peas
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 4 oz cream cheese
  • Salt, pepper, and thyme to taste

Instructions

  1. Select the sauté function on the Instant Pot and heat olive oil. Add diced onions and minced garlic; cook until golden brown.
  2. Season the chicken breasts with salt and pepper, then add them to the pot. Brown for about 3-4 minutes on each side.
  3. Pour in the rinsed rice and chicken broth; stir gently to combine.
  4. Seal the lid and set to cook on high pressure for 10 minutes.
  5. After cooking, let the pressure release naturally for 10 minutes before performing a quick release.
  6. Stir in cream cheese until melted, then add bell peppers and peas; mix well.
