Ingredients

  • 8 oz spaghetti or fettuccine
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley), optional

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and minced garlic; sauté for 1-2 minutes until fragrant.
  3. Add drained pasta to the skillet with garlic. Gradually stir in Parmesan cheese until melted into a creamy sauce.
  4. If needed, add reserved pasta water one tablespoon at a time until you reach desired creaminess.
  5. Season with salt and pepper to taste and serve immediately topped with additional Parmesan if desired.
