  • 2 pounds Yukon Gold potatoes
  • 1 whole fresh garlic bulb
  • 4 tablespoons unsalted butter (melted)
  • 1/2 cup heavy cream
  • Salt and pepper (to taste)
  • 2 tablespoons chives (optional, finely chopped)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Peel and chop Yukon Gold potatoes into even chunks. Place in a large pot of salted water.
  3. Bring the pot to a boil over medium-high heat and cook until fork-tender (15-20 minutes). Drain well.
  4. In a large bowl or pot, mash the drained potatoes with roasted garlic cloves squeezed from their skins using a potato masher or ricer.
  5. Stir in melted butter and heavy cream until creamy; adjust consistency as desired.
  6. Season generously with salt and pepper to taste before serving.
