  • 1 lb fresh shrimp, peeled and deveined
  • 1 lb fresh clams, scrubbed
  • 8 oz lump crab meat
  • 2 medium Yukon Gold potatoes, diced
  • 1 can (13.5 oz) coconut milk
  • 4 cups vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Sauté onions and garlic in a large pot over medium heat until translucent.
  2. Add diced potatoes and vegetable broth; bring to a boil. Simmer until potatoes are fork-tender (about 15 minutes).
  3. Gently fold in shrimp, clams, and crab meat; cook until shrimp curl (5-7 minutes).
  4. Stir in coconut milk and simmer for another 5 minutes.
  5. Season with salt, pepper, and lemon juice to taste.
