  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1 cup plain breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 large egg, beaten
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together ground turkey, chopped spinach, breadcrumbs, Parmesan cheese, garlic, and the beaten egg until well combined.
  3. Form the mixture into meatballs about two inches in diameter and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes or until golden brown and an internal temperature of 165°F (74°C) is reached.
  5. While meatballs bake, heat heavy cream and chicken broth in a saucepan over medium heat until simmering.
  6. Once meatballs are done, transfer them to the saucepan and let them simmer in the sauce for five minutes.
  7. Serve warm over pasta or rice and garnish with additional Parmesan if desired.
