  • 4 ripe tomatoes, chopped
  • 1 cup raw unsalted cashews
  • 3 cloves garlic, minced
  • 1/2 cup fresh basil leaves
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 cup low-sodium vegetable broth
  • 1/4 cup nutritional yeast
  • Juice of 1 lemon

Instructions

  1. Soak cashews in warm water for 15-20 minutes. Drain well.
  2. Cook penne pasta in salted boiling water until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté garlic until golden brown (1-2 minutes).
  4. Add chopped tomatoes; cook until they soften (5-7 minutes).
  5. In a blender, combine soaked cashews, sautéed tomatoes (including juices), vegetable broth, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth.
  6. Pour the sauce over the cooked pasta in the skillet; stir gently over low heat for 2-3 minutes until warmed through.
