- 2 medium Russet potatoes
- 2 tsp olive oil
- 1 cup shredded sharp cheddar cheese
- 1/4 cup crispy bacon bits
- 1/4 cup sour cream

Instructions
- Wash and scrub the russet potatoes thoroughly. Pat dry.
- Prick each potato several times with a fork to allow steam to escape.
- Preheat air fryer to 400°F (200°C) and cook potatoes for 30-35 minutes until soft.
- Let potatoes cool slightly, then slice in half lengthwise and scoop out some interior leaving about 1/4-inch thickness.
- Brush potato skins with olive oil and season with salt and pepper.
- Air fry at 400°F (200°C) for another 5-7 minutes until golden brown.
- Top with cheese and bacon bits, then return to air fryer for an additional couple of minutes until cheese melts.
- Serve topped with sour cream and chives or green onions.
