Ingredients

  • 2 medium Russet potatoes
  • 2 tsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup crispy bacon bits
  • 1/4 cup sour cream
  • 2 tbsp chopped chives or green onions
  • Salt and pepper to taste

Instructions

  1. Wash and scrub the russet potatoes thoroughly. Pat dry.
  2. Prick each potato several times with a fork to allow steam to escape.
  3. Preheat air fryer to 400°F (200°C) and cook potatoes for 30-35 minutes until soft.
  4. Let potatoes cool slightly, then slice in half lengthwise and scoop out some interior leaving about 1/4-inch thickness.
  5. Brush potato skins with olive oil and season with salt and pepper.
  6. Air fry at 400°F (200°C) for another 5-7 minutes until golden brown.
  7. Top with cheese and bacon bits, then return to air fryer for an additional couple of minutes until cheese melts.
  8. Serve topped with sour cream and chives or green onions.
