  • 2 cups corn kernels (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1/4 cup green onions, finely chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp melted butter

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a baking dish with nonstick cooking spray or butter.
  3. In a large bowl, combine corn kernels, cheddar cheese, mozzarella cheese, breadcrumbs, eggs, green onions, salt, pepper, and melted butter.
  4. Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake for 20-25 minutes until golden brown on top and bubbly around the edges.
  6. Let it cool for about 5 minutes before serving.
