Description

Chili’s Southwest Eggrolls are a mouthwatering snack that combines tender chicken, spicy jalapenos, and creamy cheese, all enveloped in a crispy tortilla.   • 1 lb boneless chicken breast
  • 1/2 cup jalapenos (fresh or pickled, diced)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 2 tsp chili powder
  • 1 tsp cumin
  • Oil for frying

Instructions

  1. Preheat the oven to 350°F (175°C). Season chicken breasts with salt and pepper and bake for 20-25 minutes until cooked through.
  2. Shred the cooled chicken in a large bowl and mix in jalapenos, black beans, cheese, chili powder, and cumin until combined.
  3. Place about 1/4 cup of filling in each tortilla's center. Fold sides in and roll tightly from the bottom up.
  4. Heat oil in a deep skillet over medium heat. Fry each eggroll for 3-4 minutes per side until golden brown.
  5. Drain on paper towels and serve warm with dipping sauce.
