- 1/2 cup jalapenos (fresh or pickled, diced)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 2 tsp chili powder
- 1 tsp cumin
- Oil for frying
Instructions
- Preheat the oven to 350°F (175°C). Season chicken breasts with salt and pepper and bake for 20-25 minutes until cooked through.
- Shred the cooled chicken in a large bowl and mix in jalapenos, black beans, cheese, chili powder, and cumin until combined.
- Place about 1/4 cup of filling in each tortilla's center. Fold sides in and roll tightly from the bottom up.
- Heat oil in a deep skillet over medium heat. Fry each eggroll for 3-4 minutes per side until golden brown.
- Drain on paper towels and serve warm with dipping sauce.
