  • 4 boneless, skinless chicken breasts
  • 1 cup crunchy dill pickles, finely chopped
  • 1 cup grated fresh Parmesan cheese
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray or 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or spray with cooking spray.
  2. In one bowl, whisk the eggs. In another bowl, combine breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
  3. Coat each chicken breast in the egg mixture first, then dredge in the breadcrumb mixture until well-coated.
