  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickles, chopped
  • 1 cup freshly grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray or 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry and slice them in half horizontally if thick.
  3. Set up three bowls: one with beaten eggs seasoned with salt and pepper, another with panko breadcrumbs mixed with garlic powder and parmesan cheese, and the third with chopped dill pickles.
  4. Dip each chicken breast into the egg mixture, then coat thoroughly in the breadcrumb mixture.
  5. Place coated chicken on the baking sheet, lightly spray with cooking oil, and bake for 20-25 minutes until golden brown and cooked through.
  6. Let rest for 5 minutes before slicing. Serve warm.
