  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal (fine)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • Vegetable oil for frying

Instructions

  1. Rinse catfish fillets under cold water and pat dry. Soak in buttermilk for at least 30 minutes.
  2. In a bowl, whisk together flour, cornmeal, salt, pepper, paprika, garlic powder, and cayenne.
  3. Heat vegetable oil in a skillet to 350°F (175°C).
  4. Remove fillets from buttermilk; let excess drip off. Dredge each fillet in the seasoned flour mixture.
