Description

  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs (room temperature)
  • 1 cup whole milk
  • ½ cup vegetable oil (canola oil works well)
  • 2 tsp vanilla extract
  • 1 cup sour cherries (or cherry pie filling)
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar
  • Dark chocolate shavings (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients; mix until just combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
  6. While cooling, whip heavy cream with powdered sugar until soft peaks form.
  7. Once cooled, spread whipped cream over the cake and top with sour cherries or cherry pie filling.
