Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lining them with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, and salt until well combined.
  3. In another bowl, mix together vegetable oil, eggs, buttermilk, and vanilla until smooth.
  4. Gradually add wet ingredients to dry ingredients and stir gently until just combined.
  5. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks.
  7. For the compote, combine blackberries, sugar, lemon juice, and a splash of water in a saucepan over medium heat; cook until thickened (about 10–15 minutes).
  8. Serve cooled cake topped with warm blackberry compote.
