Description

Indulge in this vibrant Asian chicken salad, where crunchy vegetables and tender chicken unite under a zesty dressing.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 4 cups mixed salad greens (lettuce, spinach)
  • 1 cup shredded carrots
  • 1 cup bell peppers, sliced
  • 3 green onions, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Instructions

  1. Marinate chicken in soy sauce and sesame oil for at least 30 minutes. Grill or sauté until cooked through and golden brown.
  2. Chop salad greens, carrots, and bell peppers into bite-sized pieces.
  3. Whisk together soy sauce, rice vinegar, honey or maple syrup, and sesame oil in a small bowl until smooth.
  4. In a large bowl, combine chopped veggies with sliced chicken. Pour dressing over the top and toss well to coat.
  5. Sprinkle toasted sesame seeds and sliced green onions before serving.
