Instructions
- In a large pot over medium heat, warm the olive oil until shimmering. Add the diced onion and sauté until translucent (about 4 minutes).
- Stir in the chopped carrots and minced garlic; cook for an additional 3 minutes.
- Add the chopped cabbage and canned tomatoes; cook until the cabbage wilts (about 5 minutes).
- Pour in the vegetable broth along with bay leaves, thyme, and black pepper. Bring to a gentle boil; then reduce heat to low.
- Simmer for at least 30 minutes to allow flavors to meld.
