  • 2 tbsp low-sodium soy sauce
  • 2 large eggs, beaten
  • 1 tsp sesame oil
  • 1 cup frozen peas and carrots
  • Salt and black pepper to taste

Instructions

  1. Prepare the cauliflower by cutting it into florets and pulsing in a food processor until it resembles rice.
  2. Heat oil in a large skillet over medium-high heat. Add diced chicken and cook until golden brown (5-7 minutes).
  3. Stir in minced garlic and sauté until fragrant (30 seconds).
  4. Add bell peppers, frozen peas, and carrots; stir-fry for about 3-4 minutes.
  5. Fold in the cauliflower rice and cook until tender but not mushy (about 5 minutes).
  6. Push ingredients aside; pour in beaten eggs, scramble until just set, then mix everything together.
  7. Finally, stir in soy sauce and sesame oil before serving.
